This layering balances extreme sharpness with durability. Both blades wear the Tsuchime hammered pattern—an ancestral Japanese technique that creates air pockets to reduce drag and prevent food from sticking.
Sharpened to a precise 15° double bevel grind, the thin blades cut cleanly. Ebony handles sit balanced in hand. Bamboo sheaths protect every edge.
