At 9 cm, this paring knife handles everything that happens away from the cutting board — peeling, coring, and intricate trimming. Its blade profile is a hybrid between a sheep's foot and a spear tip: a mostly flat edge for clean peeling strokes, with a gently pointed tip for precise coring. The tsuchime hammered finish reduces the contact surface between blade and food, so thin slices lift away without tearing.
