Es ist etwas zutiefst Befriedigendes daran, den Deckel einer Tajine zu lüften und den Dampf langsam aufsteigen zu lassen. Diese kegelförmige Tajine aus Terrakotta hält die Wärme sanft und gibt die Feuchtigkeit an das zurück, was darin köchelt, so wie es beim Kochen in Tontöpfen schon immer der Fall war.
